3 Easy Oregon Recipes to Cook in Your Hood River Vacation Rental

Bacon & Brussel Sprout Skewers

Prep time: 10 minutes

Cook time: 25 minutes

Ingredients:

• 1 lb bacon (thick cut)
• 1 lb brussel sprouts
• Salt
• Pepper

Steps to Prepare:

1. Preheat the oven to 400°F.

2. Pierce one end of a bacon strip with a skewer, then alternate between piercing Brussel sprouts and winding the bacon strip around to pierce it on the skewer again, braiding the bacon strip between the sprouts. You should be able to fit three or four sprouts per skewer with this braiding method. Sprinkle the skewers with salt and pepper. (Try using sea salt and freshly ground black pepper to really propel this dish to the next level.)

3. Place them all on a baking sheet and bake in the oven for 20-25 minutes.

Blackberry Aperol Spritz Cocktail

Prep time: 5 minutes

Ingredients:

• 3 parts Prosecco
• 2 parts Aperol
• 1 part club soda
• 1 part blackberry syrup (1 cup water + 1 cup sugar + 1 cup blackberries)
• Blackberries (for garnish)
• Ice

Steps to Prepare:

1. Make the blackberry syrup first by boiling the water, sugar, and blackberries in a saucepan. Reduce to a simmer once it starts to boil and simmer until the berries burst (it should take about 15-20 minutes) and the syrup thickens.

2. Mix all the ingredients in a glass per the listed ratios.

4. Voila! This easy cocktail recipe is a great way to use the local berries you buy to put a Pacific Northwest twist on the classic Aperol Spritz.

Fresh Cherry Cobbler

Prep time: 1 hour

Cook time: 1 hour

Ingredients:

• 1 cup flour
• 1 cup sugar
• 1 tsp baking powder
• 1 cup milk
• 2 cups fresh cherries (pitted)
• ¾ cup sugar
• 1 tbsp flour

Steps to Prepare:

1. Preheat oven to 350°F. Place the butter in the pan and throw in the oven for roughly 5 minutes, to melt it.

2. In a bowl, mix together the 1 cup flour, 1 cup sugar, and baking powder. Stir well. Then mix in the milk. Pour the batter into the pan on top of the melted butter. You want to pour it on top without actively mixing it in.

3. In another bowl, toss the cherries with the ¾ cups sugar and 1 tbsp flour. Pour the dusted cherries over the top of the batter.

4. Bake for 50-60 minutes, or until the batter is golden brown.
